Pairing Chocolate With Wine
Any Wine 101 guide would tell you that wine has to be sweeter than dessert, or wine will taste bitter or the dessert wont taste sweet.
However, wine balances beautifully with good quality chocolate, especially chocolate with cacao nibs that lower the percieved sweetness of the chocolate and emphasizes the fleshiness and tanniness of the wine with a wonderful undertone of earthiness.
Good quality chocolate has little sugar content and a very well balanced taste profile that is neither very sweet nor very bitter. In general, you would look to chocolate with at least 60% cacao and less than about 13% of sugar. This kind of high quality chocolate has just enough sweetness that balances the bitterness,
Youthful red wines with a rich balance that emphasizes the good fruit character of the wine goes best with chocolate.
